
Saltado is fusion food; a basic standard in Peru, it came into the cuisine via Chinese immigrants. Created in a wok, (there’s a big clue) the flavors are distinctly South American – onions, tomatoes and tart chili paste bringing out the richness of beef. Many recipes include soy sauce in the marinade, but Ignacio Barrios’ own recipe is unique.
Merka Saltao, Barrios’ new restaurant in downtown Culver City, is a fast-casual that can do a grab-and-go lunch, and a patio that’s perfect for a long, slow dinner with drinks and friends.
A saltado is a stir-fry, a term exclusive to Peruvian cooking, and the high heat and quick cooking intensify the flavors in a delightful way. Barrios is a native of Peru who has traveled widely, and cooked in both London and Los Angeles on his way to Culver City. “The flavors of Peru are really unique; we have fruits, vegetables, and chiles that no one else in the world has!”
His inspiration to feed people in Culver City is focused on bringing those flavors to a new audience, one that enjoys fresh food and intriguing spices. He had just come from the Tuesday Farmers Market, and even more ideas were simmering, new combinations coming to mind.
The menu at Merka Saltao is one that welcomes everyone; not just beef and potatoes, but the quinoa, the tofu, the hot honey chicken, and their bespoke hot sauces are not to be missed. There are mulitple ways to create a saltdo bowl. They also offer burritos – bright with beautifully spiced beans and filling enough to share. Saltado can also be a salad, served with greens (rather than the standard of rice) and there are options for a Caesar and a kale salad as well.
While the weather has us all more than warm, it’s a great place to get a cold drink – one that you won’t find anywhere else. The Chicha Morada is made from purple corn (and other things) and offers a sweet, floral kind of tang that is refreshing. Not hibiscus, although the color might make you think that; maybe a sibling or a cousin. Sweeter, but not cloying, just a little bit of tart, and rich in a way that feels inspired. Merka Saltao also serves beer and wine, so you can get an IPA, a Pilsner, or a glass of white or rosé. We highly recommend the frozen Culver Sour, made with sherry, which is all the best of cold and crisp in one glass.
Equally unique is the Lucuma Delight on the dessert menu. Combining a Peruvian fruit with dulce de leche, topped with a touch of dark chocolate and sea salt, it’s an unforgettable flavor that’s the perfect punctuation to a meal.
No less than National Geographic has named Peru, particularly the city of Lima, as one of the “Ten Best Gastronomic Destinations” in the world. But you only have to go downtown.
